It's literally exactly the same as how 64 and Sunshine were set up, go back to those games and you'll realize there wasn't any platforming in most of the main levels, just small parts.

Most of the platforming was done in the "secret" areas, where Mario is teleported to a small confined part of the level full of platforming challenges.

Also they're only showing the beginning of the game, of course it's not going to be hard.
