Easy mode doesn't require you to use most of the game's mechanics and allows for a fuck ton of cheesy exploitative strategies because it nerfs things like enemy launch/stun resistence and aggression significantly. Combine that with speedrunning and you have a game where you run past half of the encounters and do the rest in the least exciting way possible. What you're saying is pure nonsense, every fun game can turn into a dull slog if you come up with the right self imposed challenge. Or at least any game with depth.
