How do I get myself to play and finish single player games that

Just make it a goal. I find it hard too, but that's because I usually try to see/do the majority of what each game has to offer.

Never maximum completionism or anything, just "most sidequests" and whatnot. Just take it slow and don't feel bad if you stop on a game for awhile. You'll come back to it eventually. Thought be warned. If you reach the "endgame" stretch, it's best to see it through to the end. It can suck coming back to the end of a game after a year or more of not touching it at all.
