Souls games may have actual "levels", Monster Hunter is pretty much just a collection of bosses.
But gameplay wise Monster Hunter is a million times more challenging and satisfying than Dark Souls. Monster Hunter is just more fun, not to mention there's a bigger variety of weapons and armor. Multiplayer is also better.
