Basically this. Buffs are largely useless in regular battles because you're trying to conserve SP, but in bossfights where you pretty much have more than you'd ever need, you can go crazy with the buffs and shit. Also I rarely bother with trying to give Joker good offensive skills, just keep him alive with lots of resistances and have him support and occasionally guard if his HP gets low or the boss goes into srsbusiness mode.

I start boss fights with Makoto, Ann, and Yusuke. Makoto spends her first turn buffing everyone's defense, Yusuke buffs everyone's defense, and Ann nerfs the boss' attack. They all learn these by like level 70 at the latest, so there's really no excuse for not having the skills.

Joker spends his first turn buffing everyone's attack, but I understand if you don't have a persona with that skill.

Anyway, you just repeat these steps whenever the buffs run out, it's very hard to get put in a position like you mentioned. Just keep healing Joker as you need it, and swap out the other party members as they get to critical damage. When everybody is fucked up, use one of the items that restores full HP/SP to everyone.

Then, when he gets to his later form and starts using magic, he'll always use it in the same pattern, so swap out your dudes to avoid ever giving him a critical attack. I thought it was a fun, sufficiently challenging, and satisfying boss fight. Would have been happy if the game ended right after it, instead of tacking on the extra obligatory KILL GOD chapter.
