9 is looking to be the best by far.

You could safely skip 2 and 3
5 is good and the last of the PS2-era
6 changed a lot but mostly for the worse
7 reverts those changes and has the best story in the series by far but lots of clones and no Free Mode
8 has the tightest gameplay and is probably your best option

You just think they're hallways becouse the draw distance was bumped so dramatically from 5 to 6 and the characters themselves move 2 times faster than in older games. The maps are bigger than ever.

They said that you progress through each era with main battles and optional battles. Main battles are supposed to be very difficult unless you do the optional ones to make them easier: the example they gave was Lu Bu chasing you into Luoyang if you neglect to deal with him earlier. There's multiple ways to do objectives now, like sneaking into a castle and assassinating the leader instead of sieging it

Seeing as DW is action branch of RoTK that was split into levels just becouse of technical difficulties it's only natural that DW would aim to have a open world similar to the map of the RotK series.
