Pretty much all of them except Chains of Olympus are better. God of War 3 is absolute pinnacle of the franchise.
I recommend you play Chains now since it's a prequel to GoW1, and then play Ghost of Sparta which is an interquel set between GoW1 and GoW2, then just play GoW2->GoW3.
