Get rid of the Watchers that heal it first, duh.
Then, fire at the glowing parts of their shoulders until that part of their armor breaks away. They'll growl at you. Shoot them in the face when they do and they're done. If you miss shooting them in the mouth, shoot them in the back or just execute them once you've broken their armor.

They would instantly kill you without any indication of where they were, and no time to react (there was no 5 second limit if they saw you). Insane damage compounded by poison, high chance of stealing the two most important contracts (Air and Water), and given that countering is one of the only methods to beat it, one unlucky Hellfire can wipe you out with ease.
And you have to get the Griffith's Ash (absolute best staff) from it, there is no alternate drop source.

Gattuso is a boss you can bumble into around level 13.
Generally walkthroughs will recommend you are at level 17+
The boss itself is level 20 and is accompanied by two level 16 mooks
Gattuso is fairly fast and moderately large, hitting fairly hard for its level
It is fast enough that it will interrupt your casting of skills
The boss and its mooks are also attuned to poison so if you don't have antidotes, or poison wards, you're in for an uphill battle

If you are doing the optional sidequest, you have to knock it down and have a flower on the map stun it

The only goodside to that boss fight is that one of the party members has Fireball which is its weakness. But it'll still take a lot of work.
