So I've never played Final Fantasy.
Which one should I start with?

VII is considered the best for good reason.
VI is also very good, along with IX and X.
XII is a decent enough game too, but most people hate it.
V and then don't bother

You can play them in any orders, they all have different stories.
I started with Final Fantasy 4, then 6 and then 5. They are best played on snes despite four and six being two and three.
You can also go for Final Fantasy 1, and then 2 on the gba. If you don't like 2's gameplay, just skip for the other one. And then make your way to the playstation games, 7 and 9 are great, but 8 has some stupid ass change to the gameplay
Past 10, that's where shit hit the fan and the gameplay no longer stays true to the series

You are not going to find a consensus. Just do a little research and see which game(s) have the most interesting battle system to you, and then pick whichever story premise seems more interesting.
Otherwise, just play them in release order and drop any of them that bore you.
I recommend 5 as your first. Good baseline introduction to the tech and magic you'll find within the series and class change system can give you a heads up in on how characters in the other titles play. Story is completely simple but touches on what usually happens in these games... for the most part.
