There is any video game where you age over time played instead of plot aging?

Fable.you might be older than your own mother by the time you meet her in the game
It's not really your player character, but in the digimon world games your digimon usually age and die eventually. They also get tired more easily and gain less stats from training when they get old.

I played 1 a few times and 2 one time. Doesn't the aging in Fable progress based on specific elements of story? I think op was asking about a game where you just sit in a town and age, not a game where you do certain things and the game ages you according to it.

No. It's based on how much EXP you cash in. With a modifier based on how often you cast spells, if I remember right. Regardless, you'd always end the game looking old as fuck.

I've read this guy before but is he alone or are there a group of young kids who think they are 80 on the inside?

some of the Might & Magic games do this, your characters get different stat multipliers when they hit certain ages

you play as a young mage who ages at the beginning of each chapter. At the end of the game he is a geezer
