The thing with Fate is that it builds up reaaally slowly for the grand finale, and that slow build up really fucks you up at the end with that amazing last battle and how it goes from Shirou's pov to Arturia's. That was really nice.

Then you get into UBW and realise Shirou can actually do really cool shit and things kick off really early, it also helps that this route sort of have 2 "last battles", the first being Shirou vs Archer and the 2nd being Shirou vs Gilgamesh.

The it comes HF and you realise how necessary was the Shirou interaction with Archer in UBW for him to develop his abilities, because in HF he can't do shit without crippling himself and paying the price for magecraft he isn't able to use.

I can get behind Gil's death in HF because Sakura there is such an anti-servant beast what with Imaginary Numbers and shit. I am pretty sure nobody would have expected her to rise again after the damage Goldie inflicted.

This scene tho is also a proof of how Gilgamesh does not take chances when he sees potential risks. Also take the scene in Fate where he backstabs one of the only servants that could put him in trouble because of his lackluster magic defense when partnered with Kirei.

What irks me is the UBW fight where, like pointed out, one fuck up or slight stall would bring Shirou defeated yet Gilgamesh does not take out his golden fucking armor. You know, the one that can withstand Excalibur blows without getting phased.

You can't go one route and highlight how strong one thing is and discard it the next because it would interfere. First time I read UBW fight I was hyped but on a second thought it seems retarded.
