I don't know modern games that well, but if you dug Planescape, you should try Baldur's Gate and Icewind Dale. The former is more acclaimed, but the latter has a purer "gone adventuring" vibe to it, I think.
Divine Divinity and Divinity 2, once you get out of the initial towns, also hit that sweet spot. Morrowind (or Skyrim, if you prefer more modern games) also feel adventure-y. I'd avoid Oblivion, the world is really generic and the way your enemies' levels scale to yours makes leveling up worthless (and thus boring).
While were on Bethesda RPGs: Fallout 3 and New Vegas are good (the latter especially good).
Outside of RPGs: Half-Life also feels like a quest. The first two Bioshock games, too.

This is an excellent suggestion. It looks a lot rougher than anything else on the list, but it's actually a hugely rich world, and it's system is not as archaic or difficult as it looks at first glance. Really easy to pick up and play but it's challenging throughout.
