DS1 is the most similar to DS3.

You'll probably like it. It's my favorite, with DS3 being second. I also enjoyed DS2, but that's just me appatently.

DS3 was a mistake, maybe even a bigger one than 2. They saw that BB did well and decided to make DS3 exactly like it.

The character doesn't control as precisely and all the animations have too many windup and recovery frames. It makes it feel sticky and imprecise.

Example: After doing an attack with your sword in Dark Soul you can roll out of the way of an incoming attack immediately, so you attack then dodge pretty smoothly. Dark Souls 2's damage is balanced around you have all of your HP, then the hollowing mechanic got slapped on afterwards and it just makes the game feel like more and more of a chore.

Demon's Souls and Dark Souls 3 were clearly designed with that mechanic in mind, and it's a single decrease/increase you can adjust to over time, so it feels a whole lot less bullshit.
