Dex is best for weapons assuming minimum STR is had.

Parrying, footwork, feints, blocks, edge alignment, aiming and such are all DEX governed. To kill a man with a sword, you don't need the STR to cut a tree in half with one swing. A STR only fighter will overswing resulting in counters, have bad footwork resulting in trips or suboptimal reach and throw bad cuts because his edge wasn't properly aligned or miss altogether. Speed and technique are much more important. When you can stab your opponent while he raises his blade for a way too powerful overhead chop you win.

But it's the complete opposite when unarmed. A well placed fist isn't nearly as good as a well placed spear/dagger/sword point. You can't make fancy grabs when the opponent is strong enough to brute force out of them.

In ranged combat STR is nigh useless apart from minimum STR. You won't shoot harder than the bow's/crossbiw's poundage anyway and your bullets won't hit harder when you squeeze the trigger harder.

Luck is my favorite stat because when it's balanced properly it provides comparable damage increases compared to other combat stats via more consistent crits, while also allowing you to apply status effects and such more easily. Playing full luck builds just makes you feel like the world is better for you than it is for other people, and I like that.

parries deflect the blade ideally perpendicular to the swing and there's some physics involved that make the strength of the swing itself irrelevant because you push it to the side, not against it and thus give it a new direction instead of stopping it.

I had a friend in college who would do sword fighting as a hobby. he was smaller than me and quite skinny so I had about 30-35 pounds on him. we'd argue about this stuff often because I was boxing where such a weight/str difference is huge and he kept telling me it'd be irrelevant in sword fighting.
eventually I came with him to try it a few times. str didn't do shit against parries but if I pushed in hard he was fucked. basically we got to a point where one of us blocked the other and then I just threw my weight on him to force him back until he was back against the wall. I imagine it would've been a lot easier with a shield. a parry can defelect a sword but it won't stop 200 pounds of mass coming at you.
