Final Fantasy 5 will teach you all the basics and is the last "crystal" story based game. It has the iconic job system as well which you can get accustomed to. Final Fantasy VI if you want more story and want to eventually play FF7.

The story revolves around Terra and the Espers, but there is no main character. Everyone has side stories you can skip entirely and never give the character closure.
