Dragon's Dogma is pretty good for this. Start as some poor fisherman literal who in a tiny village and go on to kill a dragon. There's even an item that lets you endlessly recustomize your character so over time you can add muscle mass and battle scars and facial hair and shit.

The cyclops is already pretty fucked up when you fight it, it only has like half of one health bar. Also fisherman/sailors are known to be pretty dexterous. But ultimately I think it just comes down to video game logic.
