6 and 7 are very pure. 8 is more fun than either but looks much harder (even though it's not)
Do not play on easy mode. Just normal, you'll survive. Easy teaches awful habits.
Once you get some practice under your belt, even before you beat one, I would try out 10 and 13 too, which are both pretty easy.

Touhou 6 is commonly considered the best starting point. Touhou 1-5 aren't bad, and Touhou 5 in particular is one of my favorites, but they're a lot rougher. Touhou 1 is a completely different genre from the rest of the series, too.

Yeah, 16 seems to be a fair bit easier than the last several games have been. Considering that pattern is a stage 2 (and it's probably her easiest pattern), I would say that it's back down to EoSD level difficulty. Which is made even easier by the new gimmick.

Start with 06, install the texture patch and the hitbox patch if you want.
Play them in order.

Then you can go back to playing PC98 (that is dead and won't come back because it would cause a conflict of interests because those games aren't just ZUN's)

I found out that I can get very good skills practicing on hard. Then I play on normal and the bullets seem slower, and I stay more relaxed. Doing this let me finish 8 and 13, now I'll move to 10 or 7 sometime later I guess

The best way to start Touhou project is by going for the Normal stages on ESoD, PCB, or SA. It's quite an introduction to prepare you for the rest of the games, as they introduce new gimmicks rather than ones that had pertained to the previous games.
One of the MOST important concepts to getting far and fast is by learning to actually deathbomb - This is why I say avoid playing IN immediately, considering that the bombing devolves into bad habits. Rather, aim for shot types with direct on barrages (or if you struggle too much, go for homing on reimu on any game) once you get your feet on the ground running.
Speaking of which, you could always play Touhou 4 or 5, which both function as the same to some of the other games, but rather with a touch of bullshit.
Some of the things I recommend paying attention to / should be given :
Vsync patches
Thcrap patches (If you didn't get your game from moyria shrine, you probably lack the full english translation.)
Where your hitbox is, the size of enemy bullets, and how not to stare at the character you're playing as to foresee shit incoming - To me, this is like playing fairly fast music, as you must look ahead to the notes, you must foresee various bullet trajectories ahead of time.

Oh, it was a big deal when the THcrap patch was first being introduced.
Some people found out that the program was sending a small amount of info from the host's computer to "somewhere", and the program itself isn't all that well made in the first place. This got a lot of people riled up, but they never really ended up doing anything.
I wish I had the screencaps from when this was going on, but it also came to light pretty early on that the guy who made this thing was a douchebag who was doing it for attention, and he basically admitted to this himself. I'll dig around to see if I can find any of this stuff, it was kind of a while back, but I can't make any promises.

No, I've gone through 6,7,8 and 10. I've touched everything from 6-12 but those four are the only ones I've played a lot of.

EoSD was my first bullet hell and my first 1cc so it has a special place in my heart. I also like it for just being pretty simple compared to the other games, there aren't a bunch of secondary systems to keep track of. It's sort of like my comfort game even if I'm not great at it. Still haven't gotten a 1cc on hard, so that gives a pretty attainable goal when I feel like goofing off for a short amount of time.
