DaS 2's animation quality is the best in the trilogy. The only bad thing is the movement deadzones which while there aren't noticeable and don't affect the gameplay.

ds1 had way better level design than 2.
In ds2 you had elevators going down and suddenly you were at the top of a structure like in the poisonous windmill shitlevel or the shortcuts just didn't make any sense at all.
It was all half assed shit they did in a rush.
Plus ds2 is only more difficult and challenging than 1 if it's the first in the series for you.
But I guess that's a general problem of the souls series.
They are simply not able to increase the difficulty enough as people get more experience playing the games.

I agree, actually das2 is the best soulsborne by far.
The bosses in the dlc are the best in the series, putting orphan of kos, ludwig, fried, gael, artorias, and many other to shame. Fume Knight is goat as fuck.
Not only that but it has the most replayability of them all.
And the slow combat is the best.
