Add an option to dialogue to hit on him for the entire game as a joke as well as an option to take him out for pancakes. Everytime you do Akechi spills spaghetti out his pockets and becomes flustered, slightly derailing the conversation before getting back on topic. If you pick every romantic choice the ending would be slightly different. Akechi would apologize for having to kill you and tell you he actually reciprocates your feelings and meeting you brought him to terms with his sexuality. He gives Joker's shadow a kiss after confessing his love to a shadow.

Include Haru as a Proficiency Confidant through the flower shop. Locks itself at RANK 4 before it continues in September. Rewrite the initial 4 ranks obviously.

Rewrite the Hawaii scenario to include more day-to-day activities, include more Confidants who you are close to.

Shorten Morgana's September crisis to just 2 days.

Akechi's Confidant stops automating at Rank 6, the last 4 are manual and your answers can open an alternative route.

Akechi alternative route lets him stay on the party for Shido's Palace, he immediately leaves the group and you don't see him until Mementos Depths.

Rewrite Futaba's scenario so you don't wait 25 DAYS DOING NOTHING. Automatically wakes up after a week or something.

Akechi plans on stopping you from destroying the Grail, fights alongside Yaldy.

Akechi is defeated, you give him up to Sae who takes up Joker's place in confessing crimes and implicating Shido.

Joker's group still works to find the lady who lied in Joker's assault charge as a New Year's gift to their leader.

Dating a fellow team member would unlock a special Skill for one of the girls. Ann gets a new physical skill (Heavy attack with Low chance of a Charm). Makoto would get God's Hand. Haru would get Pierce skill (allows all physical+gun type damage to ignore resistances) or if that's too OP just give her Debilitate.

Include a new optional end-game dungeon made from all the dungeons, old enemies get higher levels/skills.

Every team member would get a new skill via a new hang out spot. Ryuji will get Thunder Reign (balanced because his MAG sucks), Yusuke will finally get a custom Severe Ice spell, Ann will get Mediorohan, Makoto will get Severe Bless spell, Haru would get Severe Curse spell.

Absolutely rebalance the useless Confidant perks, starting with Devil and Fortune's preview abilities.

Include a new town to explore or make Ginza a full town like Shibuya. Include 1 or 2 more shops/areas in every location.

Make his visits in Leblanc actually matter show more sides of him. I didn't mind his actual confrontation, but to shove everything in that one sequence he felt more like a novelty than a proper character.

Hell the way it was done, he felt more like a glorified Mementos boss while Shido himself acted as Joker's true arch enemy.

Give him a proper SL from the time he starts visiting your place to when the treasure stealing at Sae's happens, or at least more hangouts
Make his murders more about inflicting justice on victims, maybe make him a more believer of a strict society based on equality and fear of deterrence rather than obedience to one man and have it be the reason he also hates Shido, both Daddy issues and disagreeing with his ideologies, hence his reasons for backstabbing.
Don't have the thieves offer to let him join, have it as if they're telling him to turn himself in to help stop Shido while not sucking off his "achievements".

I'd rather have a direct sequel like P2 instead of a rerelease to be honest. Set a few months after the end, set in Joker's hometown with a mostly new cast but the old cast coming over to visit and joining the plot further into the game.
