sfv is accessible and has a big playerbase with crossplay, but the servers can be shitty and the devs are terrible at communication. It's an okay place to start but there's gonna be some shitty experiences.
Skullgirls has a good tutorial and has a lot more depth but good luck finding a match outside of chatrooms.
Just watch some gameplay or try it out yourself and see whatever game sticks. There's Tekken 7 and Guilty Gear Rev2 which are releasing in a few days and those are pretty good too.
