It needs another joystick and maybe shoulder buttons but it was top fucking comf during its time.
Haven't tried the xbone controller but otherwise the 360 is by far the most comfortable "modern" controller. DS3/DS4's joystick placement is awful and feels awkward as hell, and while I liked the GCN controller the c-stick was not a proper replacement for the right joystick to control camera movement.
Really want to like the steam controller but I tried playing games with it for two days and it more or less absolutely crippled me for a while because it just forces really bad hand placement.

I've used an X1 controller and it's awful, feels too heavy and clunky, buttons aren't very responsive in terms of tactile feedback (360 was far better in this regard), and the entire thing just feels like a cheap madcatz knockoff of itself.

People who haven't used the grip don't get it, but once you use the system in handheld mode, you get where and how the grip is trying to line up your hands and fingers, and it becomes a perfectly serviceable controller. Now, it's got nothing on the pro controller, but it absolutely works on its own.

Nostalgia and playing off of the established rather than trying anything new.
I mean, the SNES layout is great/fine for what it is, but there really isn't much you can do with it outside of ergonomics. So third parties just tried to model around something similar, and they're still popular because they're small/compact and work perfectly for specific genres of games, while also being absurdly cheap.
And trying to change the ergonomics would be more expensive to initially design and potentially more expensive to produce, purely because of different mold shapes.
Even modern controllers don't stray far from the established formula, though. Four face buttons, start/select and a d-pad. It's just expanded to two sticks and an external, OS-centric function button and having triggers in addition to shoulder buttons.
SNES controller is just the most iconic controller that kicked things off.
