it will allow you to keep your distance from the maneaters
I had a claymore, so when one of them came from the right side of the latern, I could swing my sword into the latern and hit him from a decent range, even without completing a proper full swing

Have you tried not locking on? that makes it easier to aim your rolls, so you don't accidentally roll directly backwards when he does a lunge, or a sideways roll when you're close to the edge.
If you ever see him freaking out and grabbing his head, that means he's about to buff. Which means GO FUCKING HAM ON HIM AS HARD AS YOU CAN.

My first playthrough I struggled with Maneater a lot and had to hire someone to help me out. In subsequent playthroughs though I've been able to deal with them solo. It helps realizing the stage was a lot bigger than it seems because since Maneater zeroes in on you instantly and you become more concerned about falling off more than anything.
