The choice of patch doesn't really matter if you're just looking at source code side of things (seeing as that the core architecture has remained more or less the same and details that have changed in balance patches are well documented already) but in terms of databases it's the best choice because at that point vanilla content is unaltered (say, elite areas are intact prior to 2.3) and the most original versions of T4/T5 content, extremely poorly documented compared to their final versions (for example, there's no video documentation of the first Lady Vashj kill because Nihilum allegedly exploited the encounter, and the tuning of this version that wasn't killed legit is of interest to me) never mind WotLK+ content, would be accessible.

This would be a horrendously difficult choice to make, since this code essentially allows you to create loads of content or even full expansions. You could make FF8 or 9 have 4 more discs of content. Let me provide an example with instruction set pulled out of my ass (and little relevance to what real instruction sets look like, you'd actually be pulling numbers in and out of memory addresses instead of registers working conveniently like that for starters) for the sake of demonstration. Let's suppose we have a program with following lines in its source code:

attacker.strength = 249;
attacker.weapon_damage = 53;
target.armour = 170;
damage = attacker.strength + attacker.weapon_damage - target.armour;

A compiled would then turn it to the following 8-bit words with following meaning to the CPU:
01010011 set following value to register A
11111001 249
11010110 set following value to register B
00110101 53
01101001 set following value to register C
10101010 170
11010101 add together values in registers A and B and place result in register D
00110011 add together values in registers C and D and place result in register F
11001100 substract value in register F from register value in register D and place it in register G

If you opened the executable in Notepad then it'd look like a garbled mess but with a hex editor you could load the compiled executable, look up the binary words in CPU instruction set manual, and in principle edit the program. But nothing at all in 01010011 tells you it's about attacker's strength and actually changing anything substantial without access to human-readable source takes a great deal of study. It can be done and it has been done, but it's all kinds of awful.

I really want to make a good RPG some day, and Xenoblade is the perfect candidate for what I feel is RPG kino. The source code would be immense in helping understand how to set up the semi-action-RPG system it uses and how to design the grand world it offers, and then after that, it's off to building a team to work on the RPG itself.
