Look at Project Phoenix for example.
The developers who work on kickstarter games will ALWAYS work on other games if they have the chance. As soon as a big developer asks for their help they will just drop the kickstarter project and work "in their free time" on it.

Games take years to be completed, especially since some aspects take far less time to complete than others. The biggest concern is honestly them running out of money before the game is completed, forcing them to slap something together and rush it out. I'm not sure that they even have any other sources of income for the company, which makes that even more worrying.

You're kidding yourself if you thought this would be completed in just three years. Simply looking at other similar Kickstarter projects, that wasn't going to happen. Most likely, they lowballed the time either because of Kickstarter limits or because they wanted to keep backer interests. I was not really expecting the game to come out until around 5 years after the Kickstarter completed, and it was a bit silly if anyone else did either.

And no, I didn't back the project. Like I said, the biggest concern is them running out of funding, thanks to the company not really doing anything else. If you've already put your money into it, then just wait and hope you end up with a good game as a result.

Companies really need to learn to just pull a Shovel Knight. Just release a game on a handful of platforms first, and then continously give out free updates/exclusive content when they get ported.

If you've ever paid attention to Japanese developer's "current development percentage" shit, you'd notice that most of the time a majority of the work gets done in the last few months. They seemingly consider games content complete at 40-50%, even though the debugging and optimization periods are typically much shorter.

Those kinds of milestones are useless to share with the public because they're scaled with their internal roadmap, which the public obviously knows fuckall about, and different studios/teams are going to have wildly varying styles of roadmaps.
