To give you a sense of helplessness and loss of control. If you know it's coming, there's no difference, but if you don't, it elicits a response from the player that a longer HP bar doesn't.

Why isn't every game just a series of linear equations that you plug some numbers into and see if they're positive or negative?

To make you think you're winning. Maybe it's a really hard fight and you're close to death, you've got the boss down to 5% and boom he's back up to full.

If you just give him extra HP you know exactly where you stand in the fight and know you're fucked fairly early on when he still has over 50% health at the same point in the fight.

I guess it just comes down to which is more exciting for the player although the restoring health mechanic is only really novel the first time you attempt the boss since you will know it's a thing on all subsequent attempts.

In WoW, the final raid boss in Mists of Pandaria restores his (millions of) health like 4 times. This is apparently because the WoW engine couldn't handle that high of an integer

It's the video game equivalent of a second wind. Health could also represent how much your character thinks will be necessary to defeat their opponent but then the Boss does something that makes your character rethink things.
