How come we don't get high profile AAA games in 8 bit style

I don't think studios go in-between the all or nothing approach to games. It's too risky to make a big budget and heavily marketed 8-bit game as it hasn't been done yet. No studio would want to take that risk.

Sprites have a stigma against them. Literally seen as behind the times, and any time someone says sprites looks nice it's a backhanded compliment. "Oh yeah man, it looks great for sprites" Basically everyone ingrained the idea that 3D is better at some point and now it's impossible to overturn it.

A great example is Street fighter. Look at third strike; then at four. Particularly Chun-li's spinning bird kick. At launch, people praised 4's animations and graphics for being fantastic. Even though most of 4's animations are terrible and mediocre. Majority of people just don't understand animation at all.
