How do I enjoy these games? I've picked them up a few times

You find out the parameters of the game (such as Mount's fiefdoms and vassal systems) and set yourself goals.
When I played it I made my goal to become the favored vassal of the Khans, and when I got bored with that I decided to carve my empire starting with the desert niggers and so on.

Its simple. You get it in your head that you are going to become a knight in service to one of the great kings of the land. You kill outlaws and fight in tournaments until you become known. Then you swear allegiance to one of the kings, conquer and crush in his name while building your glory.

Then, once you've got a handle on the game, you start a new game where you start taking castles and territory by yourself, yell fuck the police and make a kingdom of your own.

It's a problem that many younger players face where they don't know how to enjoy a game unless it gives them a clear set goal or puts a giant icon on their map that shouts "go here!".

for me warband is great because of the mods

I understand it can be annoying when you're first getting started because you spend a bunch of time building up a force, and then you lose a stupid battle and lose everything. you just have to get better at picking your fights

if you're not already, and if you don't want to play a large overhaul mod, get the diplomacy mod right away. joining someone else's army is a good way to figure things out without potentially losing dozens of expensive troops of your own. once you're comfortable with that, build up your own army and (can't remember exact wording if it's being a mercenary or not) serve under the king whose armies you were serving in. you'll help him out in fights and stuff, but you won't have to deal with any of the land management yet

also this is a bit polarizing, but I enjoyed the game way more once I forced myself to play in first person

If this is a problem then avoid areas with mounted bandits and parties, namely the desert and steppe. Bigger parties are slower, so if you stay in the other areas and keep your party in reasonable numbers (don't go for your max party size; try to level your recruits up instead of amassing as many as you can) you should be able to either outpower or outrun opposition depending on their party size.

Warband is an enhanced version of the original and it's what basically all the mods are made for. When people talk about Mount and Blade they're taking about Warband
Napoleonic Wars is multiplayer only dlc. It's good
Viking Conquest and With Fire and Sword are self contained stories that are a bit polarizing

Swadia is the saddest fucking I swear to god, they're in the middle of all the other kingdoms and they just feast themselves to death while the other factions snatch up their lands. I don't think I've ever NOT taken over the Swadian cities, it's just too easy.
