I just bought the GOTY version on humble for $25, which everyone says is a steal and the best price it's been at.
Is there anything I can do to make combat fun before I start? The only thing I know about the Witcher is that I played 2 and the combat was shit.

Not really no. The combat isn't even that fucking horrible in the beginning, but it becomes horrible because it never truly evolves into something more.
No matter what you do you'll still be a ballerina swordsman with the exact same distance based attack system, and no matter what you do you'll still have the absolute garbage enemy design and variety.
I suggest you play on normal so its not too easy and fights feel like fights, but only really pay attention to the story and dialogue. The difficulty select only affects health and damage anyway.

I will say that Witcher has better writing and acting than Zelda.
Other than that, Zelda gets rid of all the boring shit in an open world game that nobody cares about and replaces it with open ended solutions to everything. A pretty good upgrade from the standard open world game if you ask me.
