A port makes no sense though. Zelda and Mario Kart made sense because if you didn't have a Wii U, you couldn't play it. I disagree. They brought out an impressive selection of games spanning not just their own platforms, but also Sega, PC-Engine, Commodore 64 and NeoGeo. The only place I felt the WIi VC was inadequate was the small library of N64 games, and that was all down to technical limitations. If Nintendo could bring their VC program back up to what they had going on the Wii (possibly with the addition of Gamecube games) I would be very happy.

You haven't looked at the Japanese Wii VC catalog, have you? They had 659 titles, which is a huge number compared to the 475 titles that the Wii U had. They pretty much had almost every notable title in their store. The only problem was the emulation. Probably. People joke about Nintendo not listening to fans, but generally after every fuck up they do change things around. Breath of the Wild fixed the complaints people had about Skyward Sword and Super Mario Odyssey looks like it'll fix the complaints people had with 3D World. I doubt they will call it Star Fox Zero 2 though. It would get them tons of bad press, even if they fixed the problems people had with the last game. If I were Nintendo, I would call the game Star Fox Z2 or something.

I'm (probably naively) convinced that the reason they haven't released the Arcade updates to Wii U as DLC is because they want to release a "Pokkén Arcade Edition" for the Switch. Given that the arcade machines are literally just a gutted Wii U, it's not even like it would be difficult to port.
