We had this thread the other day. Ultimately what it comes down to is whether the LGBT character is DEFINED by being LGBT or not. There are some people who will kneejerk to any sign of LGBT, but I'd argue that's because LGBT has been horribly mishandled in games. It should honestly be just another aspect of their character, rather than the defining characteristic of their identity.

With Undyne, entering into a lesbian relationship is not only not even anywhere close to a defining aspect of her character, it's even entirely optional outside of very specific playthroughs. She is first and foremost obsessed with protecting monsters, followed by being a massive dork for allowing anime to define her life so strongly. She's a hothead and she's over-the-top. Her entering into a relationship is just as much as all of these things combined as it is also her choice of partner.

I frequently reference a specific Runescape character when I enter into these threads. Angof, a former elf and current "Crystal Shapeshifter". Born male, become female. While it is an aspect of her character, it is not one that she herself ever really brings up. You only find out about it - in passing - from a personal journal she keeps and that you need to unlock by killing the mindbroken shapeshifters that have been reduced to beasts until you find her former husband's wedding band and return it to her. The context is that she does not live on a world with access to easy sex change magic like the one that the player character originates from, so that sort of thing has more weight for her. It's personal, and like any good character, personal things are often held back and protected.
