The meat, bones, and fur alone are worth a decent amount if you have the right buyer. Especially if you sell in bulk. Many animal shelter do this under the table instead of euthanization because it just makes more sense, financially and from a conservation standpoint.

I don't actually know. My father was a butcher but he didn't handle cats or anything, he just cut meat at a supermarket. I only know about this stuff because I volunteered at an animal shelter for a while and found out what was going on.

If I had to guess, the meat is used as cheap filler at restaurants or fed to animals, the bone is ground into bone meal to be used as filler for animal feed or for Chinese medicine, and the fur is used for uh, products made with fur.
