I beat Nameless King hiding behind a Lothric Knight Shield, he barely did chip damage through my shield and I could block like 4-5 hits before running out of stamina.
Also you literally can't lose to Pontiff Sulyvahn if you use a greatshield, each hit does practically nothing to your stamina.

You only need the shield when its too close to roll or you want to remain close in to get a hit/parry. If the game was remotely realistic you'd never roll and the shield would be totally neccessary.
