what are some other games like this where I can get lost in the world, upgrade my gear and fight cool bosses?
recently found pic related and I've ran through the game 7 times since I bought it last month

Fallout 4
Stardew Valley is the comfiest game to get lost to.

Hollow Knight
Hollow Knight seems right up your alley lad. At least for recent games I can think of.

Damn man, I only defeated Moonlord today after like 6 months of playing. Don't rush that much.
Anyway, I really like to roleplay in Morrowind creating stupid shit like an Argonian who can't read maps (you can disable the map ingame) or a Nord who hates water. You could become a Great House leader and never even start the main quest.
Look for RPGs I guess.

Try World of Warcraft, Final Fantasy 14, Runescape or any other MMO. If you enjoy the grinding and loot treadmill that is Terraria you're the perfect customer for a skinner box.

Terraria was so much fun that I get actually sad when looking through the world a friend and I played on for our first full run-through of the game. I wish I could erase all my memory of it and play it again.

I feel the same way except I played it alone over the course of one summer.
Figuring things out, building more impressive things, eventually gathering a collection of equipment. I just cant get the same feeling when I play anymore, but I do love the game.

If you have a console, try diablo 3.
Dragons age origins on consoles might interest you.
If you are into reading, neverwinter nights but for isometric view check first suggestion, since its more fun gameplay wise.
Lately I find myself enjoying rimworld.
You are too vague op. All rpgs have loot, open/semi open worlds or bossfights.
