dark souls has you fight the asylum and taurus demons multiple times
dark souls 2 has you kill the last giant, then go back in time later in the game and beat the tar out of him
Bloodborne has the cleric beast turn up in the DLC on fire
Dark souls 3 has an asylum demon from the first game but pissed off, and you fight a powered up version of the tutorial boss in a secret area
