What's the theology in Final Fantasy?
Each game talks about Gods, but is this thoroughly explained?
iirc they're all separate universes with Gilgamesh and the abyss from V being the only thing connecting them, so each world just has its own religion I guess.

For the most part no. You have some games that do tie in together on a rare occasion, but most are separate in all but name.

I think the closest thing to a pantheon the FF universe/multiverse has would be the Eidolons. Ifrit, Ramuh, Bahamut etc appear in almost every mainline game. Other than those, the "god" title is usually claimed by the villains when they're at the height of their power.

Depends on the game you're playing.
FFXII for example has the espers which used to be gods and tried overthrowing the gods, for which they got punished.
FFVII has Omega and Chaos if you played DoC.
Others are just humans vs gods or ancient evils.
