It's just very bland and uninteresting compared to the earlier titles, and it's literally a cakewalk to play. EU3 hasn't aged all that well though, so you might as well play 4 instead, just make sure to mod it a ton. CK2 was the last somewhat good game paradox made, and that only because it experimented with new mechanics.
Victoria 2 and Hearts of Iron 2 & 3 are the best /gsg/ games, I wish paradox would return to their roots and make something like a mix between hoi2 and hoi 3 taking the best from both games.

"Bosphorus" was always the biggest trade node in M&T 1.2x, it just had too many provinces, and also too many things flow into it
They split it into a smaller Bosphorus + Anatolia + I think some provinces went to the Lower Danube (replaces Ragusa)
In any case, you can definitely make THE center of trade wherever you want, provided you play your cards right.
In 2.0, if you loot a center of trade, it fucks off, until it's rebuilt, and it'll take time. If you loot it and annex it, you can decide to not build any workshops and universities and whatever and leave it to rot, while you give everything to your homeland.
