You can use Smart Steering AND Auto-Accelerate in Online. Some tournaments (like the /v/keend one, probably) can restrict them from the tournament ruleset.

However, if you do want to get good at the game you'll need to deactivate it so the game doesn't turn you away from all the shortcuts.

Also, if you're worried about le epic esports meme then you should be looking for another game.

Are the joycon's HD rumble supposed to supplement a speaker? It's weird, I feel like when I connect them in the grip or if I get a coin or something in Mario Kart it's almost like they're using the rumble to create sound effects. There's a little metallic cha-chink! when you turn them on in the grip, and there's a little ching! that you can hear as they rumble in MK when you get a coin. Is that intentional or am I reading way too far into it?

Most controllers have an audible VRRRRRR of some kind in their controllers, but these ones almost seem like they take that into account and try to shape the sound into a sound effect. Mute the switch or TV next time you play mario kart and listen when you pick up a coin. It sounds like a metallic sound effect, almost like something I'd expect to hear from a PS4 controller in a game like Knack or something like that. A little clanking noise.
