Okay, I don't know how to explain this to somebody who clearly doesn't understand programming, but the code on the game disc is compiled into executable machine code that's essentially gibberish to humans. Source code is code that hasn't yet been compiled, it's in a form that is readable by humans. The difference between the two is like night and day.

Doom was always a great platform for modding and source code for it only opened new doors for new wad possibilities. People still enjoy Doom because of how much content was created throughout the years, not because they play plutonia for 100 times. SC legacy, however, is very multiplayer oriented.
