Also, she's not getting killed off early, she's your main partner and probably the primary story/exposition dump. Plus the vampires are semi-immortal, your MC is able to regenerate from death using his blood stores (Souls revival mechanic). If she dies, it won't be until endgame and it'd be a major plot point.

There is more to it than that. The animations lack momentum, windups and slowdowns, things that indicate weight and power. Enemies don't seem to care at all when they are hit either.
It just doesn't feel like you are making any impact that way, it's not satisfying, which is pretty bad for an action combat game.

I fucking loathe Souls combat. It was fun for one game, maybe two, but it got old, very old. It's always the same shit, bait the enemy into attacking while staying just out of range, then go in for your own attack in the winding down period. That's it, that's all you fucking do over and over again. New enemy? Same fucking shit except you wait to see a few attacks to figure out the animations. Yes Bloodborne falls under this too.

This is just assumptions on my part. But you're right that the attacks don't feel like that big of a deal.
But I think that's exactly it. I don't think those attacks are big deals. This game might be reminiscent of the Souls games and so on, but by the end of the day it's not a Souls game. I fully expect this game to have special moves and all kinds of things like that.
And the movement of the enemies does look like they have weight to them. So I doubt the development simply lacks an understanding of it. I just the attacks of those clips are plainest, most simple, standard no special normal attacks. And I don't really mind that.
If your moveset never really moves beyond that though. Then I agree that it's bad. But if the above is true, then I would oppose even the idea of it being bad.

It's turn-based action combat and it's the main appeal of the series. You have to plan your moves and can attack only in windows allowed by the boss or you are adversely punished.
It's everything a good turn-based combat system should be without sacrificing interactive combat.
