Probably because I've put who knows how many 1000s of hours to it ever since 2007, and I got other vidya to play now. Still a magnificent game.

Play in the release order. Start with no mods - only latest patch, OR get the full "Starter Pack" first; these contain bug-fixers and light visual mods that can help performance as well.
Leave big overhauls for later playthrougs. Avoid the "Complete" -mods. Always play on MASTER difficulty for best realism and atmosphere, and disable crosshair.
Don't give up in the beginning! The starting gear sucks ass and first area can be a bit boring.
I actually did install SoC recently to replay it but it was all fucked up due to not being in 4:3. I'm sure there are mods and shit to fix all these problems but after playing for about an hour I realized it's not nearly as good as I remembered and just uninstalled it instead.

None is REQUIRED, as long as you patch it. Steam & GOG have done that for you.
That being said, you lose nothing & still get very vanilla -experience by grabbing the Zone Reclamation Project mod, which applies many small fixes + has a neat Modifier program to adjust game's parameters further. It's included in the Starter pack too.

And there's the other common rookie mistake: giving up too early. Assuming you play the game a bit like me, and take your time in the beginning, preparing for upcoming challenges deeper inna Zone, you really don't even LEAVE the rookie village for around couple hours! And if you think the literal Kindergarten of the Zone somehow demonstrates what the game has up for you... lemme tell ya, you're greatly mistaken.
But this is the exact, ages old ""problem"" of STALKER: some love the start's "Hobo phase", while others find it a slog. All in all, these games really aren't meant for run&gun players.
Finally bought these games 10 years after the first one because /v/ kept shitposting about them, it's honestly one of the most enjoyable experiences I've had over the past few years
Worst problem so far is that the gun spread is insane and you can't hit anything after like 80 metres, and it's a pain in the ass to run back and forth to sell stuff. I only just got to the second area though so yeah

Yes, STALKER has quite RPG-like progression when it comes to your arsenal. Your gear at the beginning pales in comparison to the end-game weapons & suits, PLUS you gotta deal with pseudo-realistic bullet physics. Especially pistols and shotguns have VERY short effective range and armor-penetration statistics, so you gotta get close.
Even after getting something "longer than arm", you better learn the sacred mantra of pro-Stalkers:
Low-crouch, Single-Shot, A-T-S.
Are these games fun if I don't like spooky settings? I love post-apoc slav settings but I nope the fuck out of jump-scare/lovecraft shit.

Yes. Like said, STALKERs aint exactly horror, but they can be even more effective "at it" because of that. The "scares" of STALKER are very dynamic, non-scripted encounters most of the time, and huge majority of the game you're exploring open, radiated landscapes of Chernobyl disaster Zone.

I'm not a rookie, I played the shit out of this game 10 years ago when it was released. I thought it would be fun to dig it out and replay it again. Turned out it wasn't.

There aren't really jump scares, just unexpected enemies that can catch you off guard, and to be honest the setting is actually brighter than most "apocalyptic" genre media since it's just in the area around Chernobyl, in fact a lot of the stalkers you meet say they murdered some bydlo with a broken vodka bottle in sevastapol and they're running from the law

Most of the spookiness comes from how thick the atmosphere is. There are a few enemies that are genuinely freaky, but I wouldn't call it a horror game. Definitely no scripted jump scares or anything.

Coming from a guy who beat resident evil 1 when I was 8 and watched a shit load of horror it's the only game in recent memory to not only make me afraid but give me anxiety.

I always did the tactic of hit and run, I trapped a squad of soldiers then killed them from a long place using the pistol, then picked up the weapons and started to kill all of them, and finally i did the same for the Military outpost at cordon

And if you still need to "walk up to their face", you really are still wielding some rookie shit. Get a better rifle + a scope, and the come talking. The NATO & 9x39 rifles especially dominate the Zone.

disable the crosshairs, so you don't even try to live by them. Improves the atmosphere and your playing style a lot.
The only times you should even try to shoot from the hip is when you can literally smell the Vodka or blood-stench breaths of your enemies.
I wish there was a way to interact with fire in Misery.
You know, use one of the thousand campfires to cook. Instead of wasting 1 liter of kerosene to cook one steak.
