PGXP is a new powerful set of features for Playstation emulation that significantly reduces the texture warping found in the games. It also includes anti-jittering features that had previously been created.
Note: the PGXP features found in Mednafen "beetle" in RetroArch are far out of date compared to standalone PCSXR-PGXP.

beetle hw with PGXP is way more stable for me than PGXP stand alone. Tried playing Driver with it and it just kept crashing when restarting missions and such

That's because PCSX-R itself is a clusterfuck of plugins. But it's also more advanced in its 3D implimentation and PGXP than Beetle HW.
There's no perfect solution sadly.

PGXP just makes the lines straight and the models look like what they're actually are instead of distortions.

PS2 doesn't need it. 3D consoles past the N64 did 3D correctly. PS1 was just before this, so it took short cuts so it didn't do 3D properly.

Unless the warp/jitter is deliberately used for any graphical effects, I don't see the point.
Just because I ate dirt whenever I was outside as a toddler, doesn't mean that I would necessarily enjoy the same experience today.

Nah, it's a good base. Just not done. The main dev for it just up and vanished one day. That happens in emulation all the time. So the HW and Vulkan aspects are incomplete. And the PGXP is way behind too.
