You should try Sin. Its quite buggy and hard to run on a modern system but it has its charm. There is some fan made patch that fixes things but mouse acceleration still remains a problem.

This, Kingpin, and Daikatana for id tech 2 games. For id tech 3 you could play SoF2 (which isn't as good as the first), RtCW, and maybe Elite Force 1 and 2.

Counter-Life. Tacticool CS weapons in the Half-Life campaign. Gives the game a whole different feel.
