Correct, but with a very quick and simple installation of DSfix you can play the game exactly as it is on consoles just with a higher resolution and if you choose increased framerate.

That and Power Within. You can get them to stagger if I recall correctly, which is the main strength of the club. I never remember getting rushed by that many phantoms, the time between ones spawning is generous enough.

Honestly O+S were the only boss to give me trouble on SL1 unless I resorted to cheesing them with pillars and the like.

You need to outpoise them and just dps them down. Power within, elizabeth mushroom / green moss etc, grass shield. You just need to fuck them up super fast. And dont summon beatrice - she adds too much extra health, and if they attack her, they can hit you and fuck you bad.

Depends heavily on the build I'm making since I usually just head straight for the weapon/armor set I'm going to use that playthrough.

After completing a playthrough I usually just check the wiki for neat looking armor sets and weapons that I'd like to use and start a new character. I always do this with souls games and I've only once gotten as far as NG++ on any character. Making cool looking characters with weapons that match their character is fun.

My legitimate answer is that because for some stupid fucking reason DaS1 devs tied spell cast speed to dex so if you're a sorcerer or pyromancer but you focus on strength for melee you're handicapping yourself a little bit. It's bullshit. Also since dex weapons are usually very fast weapons it kind of suits casters more.
