I played EO2U on Expert. People play without dedicated healers because they either use other classes' abilities to restore health, or they run broken glass cannon builds that one shot bosses in a single turn. You don't have such luxury in Persona, because your party is fixed, and you don't have completely nullifying damage buffers like in EO. And even if you did, the bosses are likely to just spam almighty attacks which would go through it anyway. Like it happens in SMTIVA. You need to use a healer in Persona because you're limited in your options by the game's design.

I dropped P5 during the star trek dungeon because the shit leading up to it was the most infuriating bullshit I've ever experienced in game and the dungeon itself sucks dick.
