Hm, well. I have these few headcanons about how Mercy and D.Va got to know each other, like

So I'm a fan of the characters/designs and of course the yuri, but I haven't actually played the game (and I don't intend to), because the all PvP gameplay just isn't my thing at all, and now I'm wondering if I should let that deter me from attempting to write some sort of Overwatch yuri fic (most likely featuring D.vaMercy).

How important do you all consider canon facts/characterization for a fanfic? And how much of that canon could I pick up from reading up stuff like official bios or quotes on the wiki?

Yes, you should. All the "characterization" the game offers is from the voice lines of the characters which you can find online anyway. Everything else you can read on the wikia and the game's official website. There's not much to go around so imagination is key.
