What are some shows that, although have remained excellent shows

I wouldn't call it excellent like Justified but that perfectly describes Sons of Anarchy. Seasons 1-2 and 4 were quite good. Season 3 is a retarded mess and the last seasons aren't much better.

I think Justified is pretty consistent all throughout except season 5

Season 5 of Justified is the only regression in the show. And it's still a fantastic season of television.

TrueBlood lost itself half way into Season 4 and then continued to nosedive exponentially. I have rarely, if ever, seen a show that was able to capture the line between 'stupid, campy fun' and 'weird, supernatural events' like TrueBlood was able to do so. Post Season 3 however is incredible. Just watching the last 2 seasons alone is some sort of impossible task.
