There was still a lot of the book to use. As you said, Stannis' story in the books is way bigger. Lady Stoneheart, Dorne's plot which could've been introduced as its own separate thing with its own characters' stories (same way King's Landing, the Wall, Meereen were separate) but nah lets butcher Stannis' characters and kill him off like a chump and do the same to Littlefinger a few seasons later. In the books he's just too big to fight normally. He's 8 feet tall and over 400 pounds in the books, he has massive reach because he can use a great sword one handed and carries a shield so heavy other men can't lift it.
