Why the fuck were they pretending to have an argument with Arya

I guess it's reasonable to think he was listening (either directly, or through his spies). Arya talking shit but then flipping the dagger around and handing it to Sansa handle-first was a signal that she meant her no harm. If not to Sansa then def to the audience.
