Depends. I'm sure some are approached for their voice. Sigourney and Morgan Freeman do a lot of v/o work, and they both have established careers.
Sometimes they are producing the doc, sometimes their friend is the director and they do the narration to get some exposure.
But honestly its good pay for spending an afternoon in a climate controlled sound booth reading a script. You dont need to get dressed or sit in makeup.
