Shading takes a lot of time and effort, and everything is both drawn and "painted" digitally. Usually using vector (so math-based) lines. So what you get are perfectly smooth lines and solid blocks of color with no grain or variation. Someone could spend the extra time adding detail lines or effects to add "texture" to the colors, but there's just not much appreciation for that sort of thing (or the time/money it takes) anymore.
